7 things I want YOU to make me at your next BBQ

You know what I love?  Barbecues.  You know what I love cooking on the grill?  Seafood.  You know what I love even more than barbecues and seafood?  When you make it for me.

I love barbecues and what I love even more is when I do not have to host them. Yes, I hate entertaining, I would much rather give you a nice bottle of champs or wine and eat something delicious off of a paper plate at your home.  No worries, I’m not fancy or hard to please and just in case you want to invite me over this summer, here are my 7 favorite grilled seafood recipes from my favorite, allrecipes.com that I would love for you to make me at your next BBQ.

1. Grilled Salmon

Lord Jesus, if you could see my soul, it is jumping and screaming from pure happiness.  This recipe has never failed me.   It is sooo good.  We eat it alongside grilled asparagus and my kids like it with broccoli.  Mmmhmmm…  I think the secret ingredient here is the soy sauce but I will let you be the judge.

2. Marinated Grilled Shrimp

This recipe is so simple.  Sophia loves helping us with the marinade.  Penelope…  She loves whining about Sophia helping us with the marinade but doesn’t actually want to help (read, middle child).  Just be careful not to overcook the shrimp because SOMEONE (not saying it’s my husband) has overcooked the shrimp a gazillion times.

3. Fish Tacos with Chipotle Lime Dressing

Mouth. Is. Watering.  I don’t know why but my brain fools me into believing that when tacos are filled with fish instead of beef or chicken, I can eat at least 3 more.  This recipe is, as my friend Brandi would say, “slap yo momma” good.  I’m so angry that I never put tortillas and grilling together but when I did, I saw the light.

4. Grilled Sea Bass

I’m all about that Bass, bout that bass, no burgers.  There is nothing in this world like a well made Sea Bass.    My husband is pretty picky with his seafood options but even he is all about this bass.  I love pairing this grilled sea bass with a kale salad and a good vinaigrette.

5. Grilled Halibut with Cilantro Garlic Butter

I feel that the secret to anything tasting delicious is garlic, butter and cilantro.  That’s why I love this recipe.  It is simple, quick and so delicious.  SOMEONE also doesn’t F it up as much as I like my Halibut a little well done.

6. Dad’s Excellent Scallops

Okay, not my dad but someone out there has a dad that makes these amazing scallops.  While my dad is great at making reservations, this dad is definitely winning.  Like most seafood recipes, this one is also simple.  So simple, my husband can do it which gives my children the luck of having a dad that makes excellent scallops.

7.  Rock Lobster Tails

Okay, so I kind of lied.  I am also a beef lover and my husband grills my dad and I a delicious surf and turf dinner at least once every summer.  Served with a bucket of butter on the side and an oversized baked potato alongside a NY Strip grilled to medium well perfection and my summer is complete.
